It can be very useful to think large when making your favorite chicken stock. If you cook a big pot of stock, you can freeze it for later. Good chicken stock that you make at home makes a great starter for soups, casseroles, stews and other dishes. Allow your stock to cool, then put portions in heavy-duty Ziploc bags made for freezing.

Leave the bone in a roast when you are cooking and pressed for time. The meat cooks faster this way due to the fact that the bone carries the heat right to the interior of the roasting pan. Once your roast is done, just cut the meat from the bone, then serve.

Try drying your own fresh tomatoes. Dry your own by slicing ripe tomatoes 1/2″ thick, or cut Romas in half, lengthwise. Place the resulting tomato pieces on a rack, then salt their exposed flesh lightly. The rack should then be placed on a baking sheet in an oven set to 190 degrees for no more than 10 hours. Place them in the freezer in plastic bags. You can put the dried tomatoes with fresh herbs in a jar with olive oil to preserve them. Put this jar in the fridge and use it up in two weeks time.

It is vital for cooks to have their supplies organized when cooking. If they’re not organized, you’ll waste time looking for needed items. Group similar items together, and keep them in the same area. For instance, place parsley and basil in one cabinet, since both are spices.

Many popular veggies and herbs have a strong residual odor that can remain on cutting boards well after use. Make a small mark with a marker on one side of your board to remind you which side is for sweet items and which is for sour.

After you finish cooking, let your meal rest and soak in the juices. A lot of people don’t understand the importance of letting a meal sit for a while. It is very tempting to serve the meal from grill to tabletop. But, you will not enjoy the full flavor and texture of your meal if you engage in this practice. Always allow your meal to rest and cool down a little.
